Pepper began life as a trout water, was excavated from 1990 and first opened to carp anglers in 2003, with a 2007 extension nearly doubling it in size. The combined lake is around 7 acres across two linked sections — Old Pepper (swims 1–8, shallower, reed-lined) and New Pepper (swims 9–16, deeper, with three islands).
A maximum of 16 anglers fish Pepper at once, one per swim, and the fishery says booking is essential given its popularity and limited swim count. Half-lake and whole-lake exclusive bookings are also available, though these exclude the Bailiff's Swim, which stays reserved for fishery staff.
